The Zen Nutrition seminars are a chance to uncover the truth about what you’re eating and how just small changes can make all the difference.

After a car accident in 2007 I suffered a long battle with my recovery. Within a month of my physical scars healing I suffered intense blinding migraines, fibromyalgia, insomnia, constant nose bleeds, muscle weakness, unbearable painful muscle spasms, loss of sight and other unexplained symptoms. Within weeks I was diagnosed with Myalgic Encephalomyelitis or ME, as it’s more commonly known. After months of trying to manage the symptoms, taking up to 32 tablets a day I was then made redundant, became bed bound and completely dependent on others. I began to research my condition as best I could but with so much conflicting information, this stress just added to my condition to the point I could not longer eat properly. As my food intake was the only control I had, I began to listen to books on tape about the relationship between nutrition and my illness. Although there is always conflicting information I followed my instincts and listened to my body to find the foods that exasperated or even slightly reduced my symptoms. Over time I uncovered the foods my body responded positively to and I started to research why.

Although now being a certified Nutritionist my main studies were years of research, trial and error on myself before my qualification studies. As with anyone who knows me I am true to what I have learned and follow a very clean, healthy and nutritious diet. I am a home cook who avoids processed foods. In my diet I no longer include, alcohol, sugar or substitutes ( including honey, maple syrup, acesulfame potassium, agave nectar, aspartame, high-fructose corn syrup, neotame, stevia leaf extract, saccharin, sucralose or sugar alcohols aka sorbitol), wheat or derivatives of wheat (wheatberries, durum, emmer, semolina, spelt, farina, faro, einkorn wheat), rye, barley, triticale, malt, brewers yeast, wheat starch. This has been the easiest process to learn and follow and the results are that my ME is in full remission, I haven’t had flu or training injuries for nearly 2 years and my energy levels are through the roof.

Today my diet has evolved to such a level that impossible to for me to eat like I did 10 years ago. I don’t expect anyone to eat like I do but I know that when you find the right nutrition and you get that balance there’s a vitality in your body you just never want to give up. My seminars are not about my own personal diet, because that’s only what’s right for me. My seminars teach you the rules of nutrition so that you can make the right decisions for your body. With all my teaching we uncover the truth about; macronutrients/micronutrient and how best to combine these to not only fuel your body depending on what you need but also to thrive on the energy your diet should provide you.

I am not a dietician so I hold no claim to curing illnesses, writing weight loss diet plans, food menus or telling you what you should and shouldn’t eat. My intention is to help uncover the truths about nutrition that may help you achieve what you want in life. I hold no judgement to anyone’s current diet and provide information only. It is recommended to bring writing tools to take notes and I aim to answer as many questions during each session as I can.
